Zucchini & Cheese Patties

Oven Roasted Zucchini and Cheese Cutlets


Ingredients: Quantity
Zucchini grated 2 nos
Carrot grated 1 nos
Potato boiled and smashed 1 nos
Onion finely chopped 1/4 cup
Ginger Garlic Paste 1 tsp
Mozzarella Cheese 1/2 cup
Cheddar Cheese 1/2 cup
Egg beaten (optional) 1 nos
Bread crumbs 1/2 cup
Pepper To taste
Salt To taste
Red Chili Powder 1/4 tsp
Garam Masala Powder (Optional) 1/4 tsp
Olive Oil 2 tsp + Extra for brushing


Preparation:
1) Pre-heat the oven to 375°F. Apply olive oil on a baking sheet and set aside.
2) Heat oil in a small pan and sauté the chopped onions and ginger garlic paste for a couple of min's until the onions are slightly caramelized.
3) Mix the grated Zucchini, grated Carrot, smashed potato, sautéed onion and ginger garlic, Mozzarella cheese, Cheddar cheese, pepper, salt, red chili powder, and garam masala powder.
4) Make patties and put them in the egg wash and then coat with bread crumbs.*
5) Line the patties on the baking sheet and brush them with a little oil.
6) Bake them for 12 min's and turn sides and bake them for another 10-12 min's.
7) Broil on high for 1-2 min's on each sides and remove from the baking sheet and serve hot with tomato ketchup or mayo.

Note: * You can also add the beaten egg and bread crumbs to the mixture on step - 3 if the patties fall apart and not able to take it out of the egg wash. You can try adding little corn starch for the egg when you mix it. I have not tried adding corn starch.

Banana/Plantain Chips

Crispy Banana/Plantain Chips



Simple and crispy homemade Plantain chips or Banana Chips, is very easy to make. Kerala style chips at home for people who are staying away from home. 

Ingredients: Quantity
Plantain/Unripe Green Banana 2-3 nos
Chili Powder 1/2 tsp
Paprika 1/2 tsp
Salt To taste
Vegetable Oil For Shallow Frying


Preparation:
1) Peel and cut the plantain into thin slices. Wash it in water and pat dry.
2) Heat oil in a shallow pan. Let the oil boil up to 350-360°F.
3) Fry the plantain slices in the oil for less than a minute and turn them once in between and remove them from oil. (Be careful not to splash hot oil while placing the slices in the oil.)
4) Place them on a paper towel and sprinkle salt and chili powder immediately, so that it would stick well while it is hot and oily. Plantain/Banana Chips is ready to eat. Store it in a airtight container and enjoy for a couple of days.

Buttermilk Pancake

Buttermilk Pancakes


Ingredients: Quantity
Buttermilk* 1 cup
All purpose Flour/Maida 1 cup
Eggs 2 nos
Unsalted Butter 6 tbsp
Sugar 3 tbsp
Salt 1/2 tsp
Baking Soda 1/2 tsp
Baking Powder 1 tsp


Preparation:
1) Beat the eggs and mix all the ingredients together and whisk until all the ingredients are well mixed without any lumps. Leave it to rest overnight in the refrigerator.
2) Heat a pan or griddle and add butter and ladle well mixed batter with a big shallow spoon. Let it cook for 2-3 Min's and turn onto the other side and let it cook for 1-1 1/2 Min's .
3) Serve hot with maple syrup or honey. I have served with sweetened whipped Cream**.


Note: * For a quick homemade buttermilk. Whisk 1/2 cup yogurt and 1 1/2 cup water with a electric egg beater for 5-6 Min's.
** Whip 1/2 cup heavy cream with 1 tbsp sugar.

Cream of Chicken Soup

Creamy Chicken Soup cooked in microwave


Ingredients: Quantity
Chicken Stock* 2 Cups
Shredded Chicken pieces A few
Usalted Butter 2 tbsp
Plain Flour 2 tbsp
Milk 1 Cup
Pepper powder 1 tsp
Salt To Taste
Cream 3 tbsp


Preparation:
1) Microwave butter in a microproof dish for 30 seconds.
2) Add plain flour and microwave for 1 minute. Add milk and stir well and microwave for another 1 minute.
3) Add the chicken stock, shredded chicken, salt and 1/2 tsp pepper. Microwave covered for 4 mins and remove the cover and microwave for another 2 mins.
4) Pour in the cream and sprinkle the remaining pepper and Serve hot.

Note:* For a homemade chicken stock, microwave covered 250 gms chicken with bones, 7 cups water, whole garam masala and salt, for 15 mins.

Simple Carrot Soup

A very simple dish, but due to it's creamy texture kids would definitely love it. Samyu a very fussy eater herself finishes it.

Ingredients:

Carrots 2 nos (if baby carrorts 10 to 15)
Unsalted butter 2 tbsp
Milk 1/4 cup
Heavy cream 2 tbsp
Pepper 1/2 tsp
Salt to taste


Preparation:

1) Cook and purée the carrots.
2) In a micro proof dish add milk and butter and microwave on high for 2 mins stirring in-between. (can add 1 tbsp maida to this mixture to make it more thick. Needs few extra mins for the raw smell of the maida to disappear).
3) Add the pureed carrots, salt & pepper and the cream and microwave on high for another 2 mins. Cool and serve.

We can puree fried onion, bean, peas together and add it to the soup and make it a complete vegetable soup.
